1. how to delete unwanted categories. 2. Can you switch back to the original format?

  I am using the Bouquet theme and the new format is horrible. I cannot delete unwanted categories.
  I also want to create a contact page and change the email contact info. Need something simpler than writing the code. The original version had a contact form option.
