I’m trying to sort out views and visits. What if, for example, 1 visitor goes directly to my blog. At point I assume s/he lands on a page and gets 1 view. It seems that if they just scroll down they could see all of my posts without generating another view. What things must that person do to get the next ‘view’?

It’s not required that your entire post be displayed on that post feed. Sounds like you might be interested in using a Read More tag, this way, you can provide a few lines of the post underneath the title, but then the user would click that link in order to open up the full post.
