3 Self vs Guided Transfer questions

Hi,
I’ve set up a self hosting domain etc and want to set everything up on my local host/server then upload to my new domain after I’ve made changes, rather than doing everything directly online. So, my questions…1 – Guided transfer instructions say they’ll add some plugins that make the site work the same as on wp.com (to my mind this means like and follow buttons, video players, etc, but I’m not sure). It says if you don’t want to pay, then just follow the transfer directions at another link, but I don’t see on THAT page that it shows how to make sure that *everything* is transferred, and I’m worried about losing things. Is there a list somewhere of plugins that will make the self hosted site work exactly like my wp.com site?
2 – If I do a guided transfer, does it have to be from wordpress.com to my new domain, or can it be from wp.com to my computer, so that my new site is still blank until I decide it’s perfect and want to upload to it? (in hindsight, this seems silly because then I’d have neither blog visible….)
3 – When I click on the purchase link on the WP Store page, it says my current wp blog is ineligible for guided transfer. Why? I cannot find info anywhere to explain this.
I guess #1 (best plugins) and #3 I don’t have the option for guided..? Are my most pressing (no pun intended) issues.

To answer your questions:
1. On WordPress.com, we have built in the functionality of many popular plugins into our service and our Guided Transfer team will work to ensure you have a similar experience on your self-hosted site.
A note: you do not currently have a custom domain on your WordPress.com site. You will need a domain in order to move to a self-hosted site.
2. We transfer your site from WordPress.com to your new webhost. Here’s more information that will be useful:

http://get.wp.com/gt-hosting/3. The Guided Transfer product is not currently available for blogs that use custom fonts. Please switch your custom fonts back to your theme’s default fonts if you would like to proceed.
To do so, click here, expand each of the drop downs, and select the “Revert” button. Be sure to click “Save fonts” and then return here.
