About page with two sets of content

This is nuts. I have an About page. When I click on “edit”, I see my text bio. When I click on “view”, it’s my blog with all my posts shown sequentially. This makes it very difficult to put an About page in the main menu. I’m using the Illustratr theme, if that matters.
The blog I need help with is: (visible only to logged in users)

You’ve set your About page to be your site’s Posts page:

If you want to actually see the About page, create a new page and set that as the Posts page:
Then, you can configure a Custom Menu here:

Now…Why are the words “Nothing Found” on the bottom of my front page? There’s also a prompt to add projects. Can visitors to my site see that?

You set your Home Page to a page that is utilizing your theme’s Portfolio Page Template.
However, you do not yet have any portfolio projects:
