  I do not want the company that is hosting my website to have Admin access. Can they do everything they need to do without that?

  You must realise your hosting provider has the highest accesslevel on their own servers. It’s pure logica they have full access to everything on their servers. Suppose a site has been hacked or has an urgent safety issue, who will be able to solve the security issue that threatenall sites on their servers and even the integrity of their servers?

  If you don’t want to have your hosting to have full access, you simply must host your site yourselve … I would say: good luck …
