Hi I renewed my domain url that I have mapped and purchased through wordpress back in 2011. The domain, though, is pointing to someone else’s site. I see online that they purchased my url in July of this year. It wasn’t up for renew until August. I do have a receipt from wordpress for domain mapping for cookingforcowboys,com, currently pointing at my free blog http://breakthedietcycle.com. I do have cookingforcowboys copyrighted along with the url.

Okay, I’m trying to answer my own question here. Please correct me if I am wrong. WordPress says that I must update my Name Servers, yet when I go to do this I am not given that option on the Edit page of my domains. Only update email and DNS settings. No Name server tab is available on my dashboard. Help please.

Domain registration and domain mapping are not the same – both must be done for a site to work correctly – updating name servers can only be done at the Registrar, but if someone else now owns the name then you will not have access to the name servers.
Unless a name is registered with WordPress.COM you will not be able to change name servers here.
What probably happened is you did not renew the domain registration and it was picked up by a squatter and is now used to send traffic to a catalog site.
Maybe they would sell you back cookingforcowboys.com.
Maybe ask a lawyer for advice, one person I know had their registration laps (the IT moron went to sleep) – cost them a pile of money in legal fees to get the name back from the squatter.

As auxclass mentioned, domain mapping and domain registration are actually a bit different. At WordPress.com, you have purchased a domain mapping upgrade, which effectively allows you to use a domain purchased elsewhere with your WordPress.com blog.
In order to use that domain, you need to maintain the actual domain registration at the registrar where you purchased cookingforcowboys.com. That’s a separate renewal from the one at WordPress.com.
It sounds like what probably happened was you renewed your domain mapping upgrade at WordPress.com but failed to renew your registration. The domain then expired and was purchased by someone else. Does that make sense?
Going forward, you could try to contact the current owner and buy the domain back from them. Alternatively, I could refund your domain mapping purchase, and we can setup a different domain. For example, cookingforcowboys.co is available. Would that work?
