Adding a Page with an Index (Archives)

Just started using WordPress and I’m trying to create a page that’s an index of my blog postings on a particular topic. So I want to assign a category to each blog post (let’s say “gardening”, “recipes”, and “fashion” and then have a Gardening page that when you go to it, it has an alphabetical listing of all my blog postings in the “gardening” category. Sounds easy enough, but I can’t do it.
I found the [archives] shortcode, which is really close, but it doesn’t look like I can limit what it shows by category, just by date, number of postings, etc. I found some stuff on archive indexes and templates (
http://codex.wordpress.org/Creating_an_Archive_Index#Creating_the_Archive_Index_Template_and_Page), but I’m a noob, using a free wordpress.com blog and theme and I can’t figure out how this works. I paste in the sample text to the HTML in the page definition and the important lines disappear (like the"<?php wp_get_archives('type=monthly'); ?>"line). The article says that there was an archives template in pre-Wordpress 3.0 and it was removed. We’ve wasted hours upon hours on this. Please help!! -

The instructions at WordPress.ORG do not apply to WordPress.COM blogs. They are two separate, but similar-looking things.
You can’t customize the archive page here. What you CAN do is manually build one, just don’t call it Archives. Call it “Back Issues” or whatever is appropriate to your field. Calling it Archives on an Archive-enabled theme will override whatever you put on the page.
