adding blocks to the MIDDLE of published page

I am desperately trying to learn the block editor before walking away from WordPress entirely. I have some published pages I want to insert content into the MIDDLE of, and it keeps defaulting to the bottom of the page. I’m not seeing the ‘three dots’ or ‘plus signs’ in the middle of the content as described on the video; they seem to only apply to initial composition.

It got worse. The page I was trying to edit had about 30 blocks. The area where I was trying to insert text and images was about the middle, let’s pretend around 15.

For reasons that defy all manner of human logic, when I updated, blocks 16-30 became the top of the page, and blocks 1-15 moved to the bottom. There is no reasonable explanation why the code for those blocks would get pushed to the bottom and the others pushed to the tops.

This block editing thing was designed for coders with the intent of getting rid of all the other WordPress.com users once and for all.
