Adding to the "about" and "home" area – "The Aging Blogger from Boise"

How to add categories that display in the same area as “home” and “about” – it has been a few years since I last worked with my other wordpress blog. I don’t recall if “home” and “about” are considered categories? Or sections?
I would like to add a couple of other subjects. Can’t remember how to do that. I am using the Able template. Thank you, from an aging blogger.
The blog I need help with is: (visible only to logged in users)

About is a static page not a Category.
(1) There is only one page we can post to in any blog and
(2) The static pages http://en.support.wordpress.com/pages/ we bloggers create do not automatically update.Only the dynamic pages like Archives, Categories and Tags created by the software when we publish a post will update automatically update with new posts.
By default the front page of the blog is the Page that displays all posts in your blog. You can create a static front page but doing that does not change what follows.
Though there is only one dynamic page in a blog for posts (not pages) http://en.support.wordpress.com/post-vs-page/ and we cannot post to more than that one page, we can create the appearance that we have posted to more than one page.
We organize posts by assigning categories to them. You can create a custom menu and add the dynamic categories pages into the custom menu.

If you look at the theme Able and its demo, you will see that directly under the header image there are sections (?) that are titled “Home,” “A Parent Page,” “HTML Elements,” “Image Alignment and Styles,” and “Readability.” (http://abledemo.wordpress.com/html-elements/) I’m asking how to set up those sections or categories or whatever they are called.
Right now, on the “Able” theme that I just started using this afternoon, the only sections that appear below the header image are “Home” and “About.” I would like to customize that area. I just don’t know how.
