Appearance menus not showing up to for me to customize.

I have been using WordPress for 3 years with no problems.
All of a sudden I can’t seem to get the new pages I have created to show up in my menus to move them in subcategories and display them on my site.
All I want to do is be able to do what I have been doing all along.
I just want to easily to create a page, add photos, go to appearance, go to menus, add a page/menus and move the menus where I want them to be for a custom appearance.
I can create a page, but when I try to add a menu, none of my previous menus show up for me to easily click and drag them around where I want them to be!!
I don’t get it. What happened? did something change?
I have been trying to figure this out for days.I have tried the online help methods as well.
I can’t see the menus that I have already created in the first place.
I have a page named Erie, or Lake Erie that I want to put under Projects.
I’ve done this 100 times and all of a sudden i can’t lol..please help.
I don’t know what I could possibly be doing wrong.Thanks.

By any chance, did you change your theme?
Different themes display menus in different ways.
