Are subscriptions counted in the stats upon "publishing" a Post?

  I am trying to get a sense of how many “hits” I really have when there are subscribers. If I have 66 subscribers and I publish a new post that lands in their personal email box without requiring them to click my URL to read it, does it get counted into my overall stats?

  No. It only gets counted if they click on the link and come to your site.
