assigning posts to categories

  Hi The Blog is stories of our travels in Europe in the last 10 months and I would like readers to be able to choose past posts to read by country as well as in the current formats, ie archives etc
  Is it possible to have a section where old posts can be sorted into countries – is this via categories.
  How do I assign old posts to new categories.
  Any ideas? Help gratefully appreciated.
