One way to prevent new posts from automatically being categorized as “uncategorized” is to go to Settings>Writing in your blog’s dashboard, then changing the default post category. At least posts written after you do that won’t have “uncategorized” checked.

Another way is to go to the “Categories” page, deleting the “uncategorized” or even renaming it.
