Backups and restoring content

I’ve created a WordPress.com website for a client but he’s concerned about people getting access to the site and breaking it, and he’s asking about backups and creating an offline version. I can’t find anything that states clearly how WordPress.com backups work.
WordPress.com says that the ‘technical stuff’ like backups are taken care of, but what does this actually mean?
I know I can’t FTP in and create my own backup of the website, so if it did go down, or something went wrong, how would I restore a backup?
I know you can go back 25 revisions for changes to individual posts/pages.
What if someone deleted a page (and emptied trash). Is there any way of getting that back?
I’ve made lots of customisations to the theme. If someone was to go in and change all the colours, delete my custom css etc is there any way of restoring it?
Hopefully someone can answer these questions, so I can inform my client. Many thanks.

Fonts will carry over, but CSS will not. CSS is theme-specific and CSS written for one theme will most likely not make sense to use with another theme. Items within your trash folders can be restored or permanently deleted within 30 days of their original trashing.

I did a thorough search using the term ‘backups’ in the search box at the support address and read all the articles before I posted here, but was wondering if there was more information available about the specifics.
I knew about exporting etc but didn’t know about the CSS revisions and that trash when emptied cannot be restored, so thanks for that.
I guess I was hoping there’s be some option where you could contact WordPress.com and ask that a backup of your site be restored. They say they do backups but not how to use them if needed. My client is worried that someone will deface his website and wants to be able to restore the whole thing to a previous version, but as I understand it that is NOT possible.
Looks like wordpress.com’s backups are only for if your entire site goes down for some technical reason and then you’d….what….email someone?

There is no “go back to last week” ability on WordPress.COM
Backups are done on the fly – they have three massive server farms in different areas in case of flood etc.
Export only exports the text – NOT the media (pictures etc.)
For deface prevention – limit the number of people that have access – only give people the minimum access they need – an Author for instance can only edit their own material
Use two factor log-in – that is where a text message is sent to a cell phone – NOTE – print the backup codes etc. and put in a safe place
You could set up a second site with a different account – and export / import to the second site to backup the media etc – IMPORTANT – set the site to “Private” to keep everyone out and keep from confusing search engines – note also that mirror sites are not allowed so that is why the Private setting
Copy your CSS changes to your PC and onto a CD for safe keeping
You are on the same system as CNN.COM, NBC, MSNBC and other “minor” players for the server farms and on the fly backup
