Backups on premium plan

Jetpack plugin is only available for Business and Commerce plans, but wordpress.com says they back up and restore all sites. What exactly does this involve? For example, if someone hacked into my site and messed up my content or if the wordpress.com servers went down, will WordPress.com team in those cases restore my site from the most recent available backup they have? And how frequently do they back up sites?
