No, I’m just confused. I changed to a different theme and it told me it would work better with block editor and did I want to change to block editor. And then I couldn’t find anywhere how to change. Only lots of reasons why.

To clarify, the theme you are using now (Seedlet) is one of our newer block-based themes, so the homepage layout you see in the demo site here:
is created using a mix of text and image blocks. You can see a “map” of which blocks were used to create the final layout here

Are you trying to set up your site to look like the homepage example shown in the demo? Your current homepage does not use this layout, but instead uses a more simplified “blog template” to show your most recent posts.

I am trying to change this really old site to something a little more modern, that will work with the new features you’ve introduced since I last worked with a WordPress site.
I would like to be more flexible with different kinds of content on the page, so that blocks thing sounds good.
But maybe I had better start all over again with a whole new site? Does that mean I will loose the name I had chosen? -
If you delete your site then yes, you will lose the blog address forever. But there’s no need to delete the site, you can change how your site looks like by changing the theme and adjusting the homepage to your liking.
As staff-totoro explained above, you can go for the demo look by adding the same blocks or, you can add a new page and choose another layout that you’ll just need to fill with your own content. Here’s more about layouts:

You can also add a blank page and work on it from scratch.
