Blog auto-date, adding items to right side bar – Bouquet theme

Subject pretty much states my two questions.
How can the date that is automatically applied to a blog be changed?
How can I add a menu item (like Contact Form) to the right sidebar?

The blog linked to above is wearing the Eighties theme. Please provide the URL for the one wearing the Bouquet theme.

When you go to the footer of your blog and click the proudly powered by WordPress link you discover that you have a WordPress.ORG install and not a WordPress.COM hosted blog.Your site is not hosted by wordpress.COM and you are posting to the wrong support forum.
WordPress.COM and WordPress.ORG are completely separate and have different username accounts, logins, features, run different versions of some themes with the same names, and have separate support documentation and separate support forums. Read the differences here http://en.support.wordpress.com/com-vs-org/
If you don’t have a username account at WordPress.ORG click http://wordpress.org/support/ and register one on the top right hand corner of the page that opens, so you can post to the support forums there.

Now I’m really confused. I thought I was downloading wordpress.com from the DreamHost site. And maybe I was since Bouquet is a wordpress.com theme. But you’re right, clicking that link indicates I’m hosted by wordpress.org.
Am I right on all this? -

You have been extremely helpful. Thank you for that. I actually was aware of the two different names but figured that WP was just covering their bases and the two were the same. So much for assuming!
But can you tell me which came first? dotcom or dotorg? In other words, which one is the knockoff? -
This is not about a knock off site.
The open source free WordPress.ORG software was developed first.
The fork used to create multiuser WordPress.COM came second.
