What methods do you recommend for us to back up the blog, should it ever be hacked?

The likelihood of your site here getting hacked is very, very small. Security here is very good. The most common ways of getting hacked is if someone either guesses your password, you leave a computer running and someone gets in that way, or someone hacks your email password and then resets and intercepts the password change email before you see it.
Keep your passwords to your email address associated with your account (settings > general), and your WordPress.com passwords very strong.

One good way way to backup your blog is to create a second private blog and set it up as a mirror site that you periodically import into. Scroll down to “Creating a mirror blog” http://onecoolsitebloggingtips.com/2010/05/19/how-to-select-a-wordpress-com-theme-part-1/
Also consider using an offline blog editor like windows live writer as then you will have a backup of every post and page you create using it and publishing to you blog from it on your own computer > http://en.support.wordpress.com/xml-rpc/windows-live-writer/
