Hi. I am going to throw my laptop out the window if no one can help me! Just an FYI!
So, I’ve recently installed Elementor and it seems great. However, there appears to be some sort of conflict going on. When I try and edit older posts or add new ones, it seems to be using a template that I created many moons ago in WordPress itself for single page posts. I have two issues; 1) it uses the template which I then cannot edit in Elementor so I can’t delete/change any elements (such as changing colours on tags, meta data, ‘previous post’, ‘next post’, titles, etc, and; 2) I cannot access Appearance –> Templates to delete it so I just use the Elementor page builders and nothing else. Since installing Elementor, many of the original options have disappeared, so I cannot get to templates to turn them off or delete them in the usual way. From now I will only be creating blog posts in Elementor, but I have to find a way of deleting the WP template first. I hope this all makes sense.
P.S I am using the OceanWP theme, which I know matters in terms of using blocks or the WP editor

We can’t help with third party plugins as Elementor. You must contact their support to find out what’s going on.

I understand that you are facing some issues editing your WordPress.com site using Elementor.
Can I ask why you decided to use that editor in the first place?
When it comes to the questions asked, when a page is created with one editor, it doesn’t transition its content automatically, mainly to avoid conflict, and you can keep using the previous editor to change the content. However, if you’d like to use an Elementor template on a particular page/post, you can do that by opening the post then selecting on the right sidebar: Post > Template, then selecting the desired template in the drop-down.

When a theme supports template editing you can find its templates under Appearance > Editor > Templates. You can find the list of those themes here.
