Blog Posts are now too long! What happened??

  How do I get my posts to just show the first paragraph or two and let people click to read more?
  My blog just looks to long when you open it up.
  Using “standard” post type used to just show the picture and heading and people had to click to get more. Now the only thing that does that is “gallery” but I don’t want every post to scroll through one picture over and over. Help!!!
