  What do you mean by manual payments?

  If you mean like a payment from Paypal, see instructions here:

  Not paypal.
  I want to capture the online order and then call back the customer and speak to them about their purchases. Some of the products we sell are for practitioners only.

  You’re going to need a WordPress.ORG version of the software and hosting elsewhere to run that kind of setup. The codes necessary are not allowed here, for security reasons.
