Can I put specific posts on specific pages?

That is, if I have a main post page, and then a page for jokes, for instance, and I want commentary on the first and jokes on the second. Can I? How?

pages are posts that sit outside of the hierarchy of posts in the main page. if you place one of the categories widgets available, the link of the category name will open up a page of posts categorised under that certain category.

if i understand, the only way to do what i want, is to just continuously add text to the 2nd page? posts will only post to the defaulted page?

yes you can continuous add text to the page. you could differentiate each “post” in that page by using blockquotes.
posts are meant to be published in the main page only, yes. =)
