Can the follow blog button say "unsubscribe" instead of "following"?

Is there a way to have the follow button widget say “unsubscribe” when they are already following so that people know that they can push it to unsubscribe?
The blog I need help with is: (visible only to logged in users)

The button can’t be changed. However, there’s a link to unsubscribe at the bottom of the e-mail notification they can receive. Or they can unsubscribe directly at http://wordpress.com/following/edit/ they log into WordPress.com.

I have another question then, what is the difference between the “Follow blog” widget and the “follow button” widget?

The Follow Blog Widget is the widget that appears in your blog’s sidebar. You can read more about this at http://en.support.wordpress.com/widgets/follow-blog-widget/
The Follow Button is located at the bottom right hand side. You can enable both, or just one of theme.

That’s correct. Most people use one.
If you want you can remove the follow button at https://veggiesdontbite.wordpress.com/wp-admin/options-reading.php under ‘Follower Settings’. Or remove the widget at https://veggiesdontbite.wordpress.com/wp-admin/widgets.php

I only had one before but someone reviewing my website to give me some tips asked if I could put an unsubscribe button and this was the closest I could find. I know how to remove it in the widget section.
