Can the sidebar nav menu and the header menu contain different page links?

  I would like to ideally have only a few page links in the header menu, but have all (or most) in the sidebar menu.

  Is this possible?

  Alternately, can I remove the menu from the header and only have the menu in the sidebar?

  Yes, that is entirely possible. What you would do is to create two Custom Menus, one for the primary top location, and one for the sidebar location. You would then assign the Primary Menu you create to the top menu location, and then insert a Custom Menu Widget into the sidebar and select the Sidebar menu you created.
