how long after I cancelled my domain name is it available for me to open it on a different site? It’s been a couple weeks already.

It looks like you’ve canceled the domain name, meaning you no longer own it.
When a domain is canceled within 5 days of registration, it is returned to the public market in 5 days.
When it is canceled later, if goes through the whole expiration process first: https://wordpress.com/support/domains/domain-expiration/
Though there are points in that process during which we can recover the domain, we do not control the process itself, it is imposed on all domain registrars by ICANN.
The domain is now in the process of being released, but again we don’t have any control over how long that takes: https://wordpress.com/support/domains/domain-expiration/#domain-released
I recommend trying to register it once a week or once a day, and as long as no one else registers it, you should be able to recover it soon.
