It looks like dellaboratory.wordpress.com is currently using Spun, which doesn’t have a Portfolio Page template.
Perhaps you’re remembering one of your other sites? charcoalines.wordpress.com is using a theme with a portfolio template :)

Gazette doesn’t actually have built in Portfolio support. You can turn them on, but the won’t have special formatting or anything.
