Can’t edit text on header

I am new to wordpress! I have tried using several different themes, but don’t seem to have any option to add or edit text to the header. Someone suggested it was because you can’t change the header in the theme I have picked, but I’ve tried several! Please help, what am i doing wrong?!

Most themes display your blog’s title and tagline (if you use it) either on top of or next to the header image. Some themes also display social icons and menus as part of the the header. Here’s a guide to finding themes that support custom headers: https://wordpress.com/support/custom-header-image/#find-themes-supporting-custom-headers. The title and tagline can be edited. The social icons and menus can also be edited as a separate option from the header. And you can also edit the header image if the theme has one.
As far as I’m aware, you’ll need to use the Business plan (https://wordpress.com/support/business-plan/) to upload a custom WordPress theme that might allow you to add or edit the header text.
