can't read text in emails when I post

The design and colors on the email notifications cannot be customized. They are the same for everyone at WordPress.com.
On the bold text issue, are you talking about for email notifications or for posts/pages on your actual site in a browser?

No, you can add bold to text within the post and page editor. It’s the “B” button on the left end of the top row of buttons in the visual editor. It should carry through to the email notification.

of course I tried that, but I am in “paste as text” mode so the bold is not appearing. probably needs to be css.

The buttons to turn your text bold will still work if you’re in Paste as Text mode. Here’s an example:
