Cant work out from the documenation (which contains no examples) how to specify a short code in the blocks editor.

Its easy to create a shortcode block, but then its a ‘blank’ shortcode, there is no where to specify what the short code is, (e.g. specifically I am looking for the code block.
I have also tried putting [code] xxx [/code] into a normal block, but this doesnt work, it just renders ‘[code]' etc.
It seems that you are either missing major functionality in the UI, or, if there is some hidden way to specify the actual shortcode you want, this is not demonstrated anywhere in any example I can find.

I also tried putting the [code] [/code] inside the shortcode blocks content, although this doesn’t make sense (putting a shortcode inside a shortcode) but this doesn’t work either. It either deletes or mangles any HTML I put inside the block.
Sadly, this forum doesn’t have any image upload feature, so I can’t show the editor and the garbage output it produces.

Have you tried the code block, not the shortcode block?
The shortcode block https://en.support.wordpress.com/wordpress-editor/blocks/shortcode-block/ is for when you want to use a shortcode like a contact form, subscription form, and the other shortcodes mentioned on this page: https://en.support.wordpress.com/category/shortcodes/ although some of those are now their own blocks.
