Since the arrival of the new editor, I’m unable to center the captions. It gives such a poor result, that I’m avoiding the use of captions whenever possible.

Absolutely. I’ve been blogging for 12 years and never had a captioning problem until this new editor. In the editing mode, the caption is centered but it appears on the left after publishing.
Here is an example:
I have to use bold lettering to mark the difference. It looks awkward and, in later posts, I try to avoid captions altogether. Which is rather limiting because I use a lot of illustrations.

The classic editor and the block editor use different types of HTML to add captions to images, and a theme has to include styling for the new type of HTML used by the block editor, else the browser will revert to using the default style for that HTML tag.
That’s what’s happening here. Your theme was created long before the block editor, and doesn’t have any styling specified that tells block-editor captions to be centered. So it appears left-aligned because that’s how most browsers style that HTML by default.
The Mistylook theme you’re using was retired quite some time ago, though, so this is not something that will be updated for this theme.
You can switch back to the classic editor, or add your images inside a classic block instead of an image block, but ultimately you’ll start seeing more and more things breaking as your theme becomes more out of date, so my recommendation here is that it’s time to start thinking about switching to a newer theme instead. If you go to My Site ->Design ->Themes, the themes you see at the top are our newest ones, and that have been specifically designed for use with the block editor.

Thank you for your detailed answer. I have been happy with the theme and I will be sorry to see it go because it is no longer functional. I’m totally afraid of applying a new theme to my blog which is, by now, a monumental work after so many years of existence. What can go wrong if I do? Is there a set of instructions? If remain cowardly, how do I switch to the classic editor?

Changing themes definitely feel daunting, and one gets attached to one’s theme over time, so I understand your hesitation.
What can go wrong if I do?
Nothing, really. The theme just controls how your site looks, and changing themes won’t affect your content in any way.
But if you’re using a custom menu that might get deactivated – it will still exist in the Menus section, but you might need to reassign it to a menu area available in the new theme. Likewise widgets might be removed if the new theme doesn’t support the same widget areas, but you can add those widgets back to the widget areas available in the new theme.
And you might need to re-do any other customizations, like a custom header, background, and so on.
Is there a set of instructions?
Whatever theme you choose will have its own instructions on how to set it up, but there aren’t any instructions for switching themes itself.
What I do before I switch themes is to first activate the new theme I’m looking at on a private test site where I’ve imported some of my content. That way I can figure out what goes where, and get it looking the way I want on my test site without messing up my actual site. Then when I’m ready I switch themes on the main site and quickly copy everything I did on the test site over.
If remain cowardly, how do I switch to the classic editor?
Click the … icon top-right in the block editor. At the bottom of the menu that appears you should see an option to switch to the classic editor.

Not sure what you’re referring to here. If you were trying to add a screen shot, you can upload that directly to your media library at My Site ->Site ->Media, and I’ll see it there.
