At present mine is “uncategorized”…how do I change this & where are the category options?

You can add as many categories as you choose -> Manage -> Categories -> Add Categories understanding links, blogroll and categories

Ahh the second link is what I was interested in specifically, so the administration makes the call as to whether mature.

So my user name & nickname should be different?

I’m sorry I confused you. You may or may not use a nickname on your blog as you so choose.
When we are working on the forum, as unpaid volunteers, we click on wordpress.com usernames which are linked to wordpress.com blogs. We do this to see the blog so we can give better advice to the blogger posting questions.
What I was indicating is that if your blog has “mature” content then I would appreciate it if you did not link your username to it here in the forum, and state NSFW so I don’t have to witness anything unexpected.
