  Using Twenty Ten.
  Hi, I’m not sure what “categories” are. Nor what they are for. It’s easy to create one, so I did. I named it “new category.” But I can’t seem to be able to select whether or not a post appears in a certain category, and I cannot delete or rename the stupidly named “new category” so that I could place posts in a category that might make sense. Thanks.

  You add categories to posts in the “categories” module in the post editor. You manage categories (rename, delete, add) at posts > post categories in your dashboard although you can also create categories on the fly in the categories module in the post editor.
