When I go to make a new category via settings-writing, i’m being told there is already a category by that name. I can’t see the category at all which is confusing as I can see the category on my menu bar on my blog.

Categories and Menu items are separate entities. I suppose you are trying to connect your Menu items and your Blogs with categories. You want specific blogs to appear in a particular menu item. These pages are known as category pages.
As you already have created your categories, you can manage them using these guidelines to make sure if the whole list there:
You can then make sure your Menu items are assigned to the correct category. You can learn more about it here:
When you assign the categories to the posts, they will appear in the respected page. You can learn about Category pages in this support document:

Hi, I’ve tried sorting it out by following the links you gave me but nothing has changed. Hopefully these pictures can explain it better. I’m trying to add new categories Wellness and Lifestyle, I have previously deleted one of them but I don’t think that would prevent me from adding them as categories again. I always get the message, name already exists.
