Categories and drop-down menus

  My blog is a travel blog and I’ve set the Categories to be the countries I write about. in the Menu which is displayed on the top of my opening page. The categories have a drop-down Menu but they only show some of the individual articles listed under that category, but I presumed that all of them would be listed. I cannot see what I am doing wrong. I add the correct category to each article but it doesn’t add itself to the drop-down menu. How else will readers know the towns and cities I write about within the Categories? I have to search myself by going into the admin. section.
