categories: can't edit, won't show up, can't delete, etc

Please help!
I’m trying to use Categories. There was one called Uncategorized. I made ONE post, made a category called backstory. Yet, the only category showing up on my journal is the Uncategroized. When I click that, it says there are no entries. Well of course there aren’t. But backstory isn’t showing up. I can search backstory, but what comes up is NOT my one post with that category, but my second PAGE. Why??
Also, I wanted to edit my category so backstory is Backstory. But I can’t!!There is no way to edit categories.
There is no way to delete categories.
The one category I am using does not show up.
The one category I am NOT using DOES show up.WHY??? Can someone please help me? I am new, and I thought editing things would be intuitive and easy. But it is not. Every tutorial I’ve seen starts with a description of a wordpress version that I do not have. :(

1. To edit or delete a category assigned to a post (whether it’s a draft or has already been published), go to Dashboard → Posts → All Posts in your dashboard, hover over the title and click the Edit link. To delete the post click the Trash link.

2. To edit/delete categories in your dashboard go to Dashboard → Posts → Categories

By default the front page of a blog displays all published posts in reverse chronological order with the most recently published post on top. When we publish a post on WordPress software the software automatically creates the same entry in the Archives, and on the dynamic (automatically updating) Categories and Tags pages in accord with the Categories and Tags we assign to that post.

Because it has allowed me to get to this mysterious dashboard that everyone keeps talking about. How come I normally don’t see wordpress this way?? Mine is a totally different layout.I’m still trying to work my way through all these links… are you saying I a category won’t show up unless one post is tagged with it? Because I don’t have any posts under UNcategorized and yet it’s still showing up. :(

Oops yeah I know categories and tags are different. I just worded it funny.
How come I don’t usually see this dashboard? Am I using a different format somehow? I can’t get to this dashboard unless I use the link you gave me. But thank you!!! -
