Categories not seen or usable?

I have a problem with my Entry page and 3 other topic pages and 3 Categories (jedmckenna.wordpress.com). I can’t seem to understand after reading all the help info what the possible relationships are between Entry page/other pages and Categories.
What I wanted was a Entry Page with several areas of discussion for people to go to. I would have put my 3 sub pages(topics) INSIDE or UNDER those Categories if I could have made it happen. But I couldn’t so I just let the pages sit on the Nav bar whci I guess will work out.
And the options for a person to select categories even tho they exist isn’t offered anywhere. What don’t i understand here? -
Categories do not exist on a blog until you create them. You do that on the Write Post page; on the right-hand side is a vertical row of blue expandable headlines, including Categories. Click on the plus to expand it and type in the category that you want to file that post in. Thereafter, it will always pop up and be available to you for future posts, and to add more, just type more into the box and hit Enter.
As for what you’re describing for your intended layout, I honestly don’t think that is possible at WordPress.com if I am understanding you correctly without designing tables in HTML and manual editing every time you make a post. It’s common enough at WordPress.org, but you need coding skills.
