Categories reorganization

Hi,
I’m looking for a way to change my categories structure – I’ve created some and then I realized I can make subcategories and I wish I could use this way of working. For now I’ve created some top level categories which I would like to move to the lower levels but I don’t know how. I don’t know how to remove them so I can recreate them… The old names of categories are blocked…
Could you advice me what to do?The blog I need help with is: (visible only to logged in users)

You can reorganize categories from your WP Admin screen. To reach that, add “/wp-admin/” to the end of your blog url. For example: najszybszemisie.wordpress.com/wp-admin/From the sidebar, select Posts > Categories.
To create a new category, fill out the “Add New Category” information on the left side and click the “add” button.
To reorganize your categories, click a category name on the right side which takes you to an edit screen. There select a parent category from the dropdown options and click “update”. Then click “back to categories” to return to the previous screen. Repeat this for each category you wish to move.
To delete a category hold your mouse over the one you want to remove and that will bring up options to Edit, Quick Edit, Delete, and View. Select Delete. To do this for multiple categories at once, click the box next to each one you wish to remove and select “delete” under bulk actions, then “apply”. If you have any posts assigned to a category which you then delete, those posts will be uncategorized. To remedy that, edit the post and update the category.
