I need help in understanding exactly how to change the category on the posts I already have and how to choose categories on future posts. I need a step-by-step explanation for dummies because I still don’t understand and I don’t want to keep posting uncategorized. What to do?

You can find the category page here (this links to your site): http://yamarella.wordpress.com/wp-admin/edit-tags.php?taxonomy=category on the left you’ll notice a spot to add new categories, just add the title of the category you want.
And add a parent, if you like. This makes the category, instead having a category for Cars and one for SUVs, you can have it as Cars -> SUV. But this isn’t critical.
Again, this isn’t critical, as some themes won’t display it, but you can add a description of the category, but you really don’t have to.
Then press add new category. (You can do all of this much faster, if you go to a new post, and press Add New Category in the Category Module).
Once you have created a category, when you go into a post, either adding a new one, or editing one, in the category module (if you don’t see it go up to the top of the page and click screen options, and make sure the category box is ticked) you just select the relevant category by checking the box. If you don’t see all the categories, be sure to press All Categories instead of Most Used.
You’ll need to untick Uncategorised, when editing the old posts.

Oh I must also say, that you should make sure that there is always less than 15 categories and tags (combined, so 1 category and 13 or less tags, etc) for a post. Otherwise, it won’t show up in the Reader.
