Category Frustration

I’m totally lost… and a complete Noob to wordpress, so i’m hoping someone can help me out.
I’m trying to set up my categories… but when i test the category on my test post, it is linking to any blog with that keyword (almost like a tag) instead of a page that shows all posts by me in that category… how do i fix this?
also… I have a menu at the top (shopping lists, etc) that links to a page, but i want to actually link it to the category page (once i figure that first issue out) so that if someone were to click on shopping lists, it would bring them to a new page showing all posts with the category ‘shopping list’.
i want to structure it similar to this website (i know hers isn’t a wordpress url… but i want it to function similar) http://www.pocketyourdollars.com
any help would be much appreciated!

The tags and categories that show above or below the individual posts (metadata) will automatically link to the wordpress.com global tags pages. For many, this ends up being a good source of new visitors.
The tags/categories widgets in the sidebar will link to your own categories and tags (local).
You can make the tags and categories listed on the posts go local by going to settings > privacy and selecting the center option (visible to normal visitors, but blocking search engines). This of course is going to mean you will not be found in searches.
The other option is to use the iNove theme which allows you to hide the categories and tags on the individual posts (appearance > theme options).

The blog you reference is a self-hosted blog. Things work differently on self-hosted blogs.
