I am trying to figure out how I can create a WordPress Homepage that displays the latest pic from each category. exactly as shown here:
Can anyone recommend any plugin or the most simplest way, thank you

The front page by default displays the feed of all your posts, most recent first. You can change it to display a static page, a category page and some themes also have portfolio or showcase pages as an optional front page, but I don’t know of any way to display one post from each category on the front page that will update automatically as you publish new posts.
I think your best option would be to use the Portfolio content type. Enable portfolio content under Settings ->Writing, and then create portfolio projects and a portfolio page (if your theme doesn’t have the portfolio page template, create a regular page and use the portfolio shortcode) that showcases those projects. Lastly you set that page as your blog’s front page
.Note, you’ll have to change the projects manually each time you want them updated.
