Category Pages

I have built a site consisting of posts according to different categories. I.E. Music/video posts, blog entries, articles, etc. I have listed the posts in separate categories, and would like to have a single page (with a menu link) with all the posts for each category. For the life of me, I cannot find a way to show the latest posts for a specific category. So basically what the ‚latest post homepage‘ does, but just for a specific category.
I have tried using several plug-ins, but the standard results are very unimpressive and I don’t know enough about coding to edit it myself. Any advice?
