Hi, I’m trying to change the email address associated with this account (or at least change the primary email) but the confirmation email never comes through?
Change: (email visible only to moderators and staff) –> (email visible only to moderators and staff)

I don’t see any attempts to change the email on your account, are you following these steps?

If what you are trying to do is to change the address for the site http://www.theresenguyen.com, I’m afraid we can not help with that, as this site is not hosted on WordPress.com but on Dreamhost.
Because WordPress.com and WordPress.org are two entirely separate entities, we cannot access files or data for sites that are hosted elsewhere, so WordPress.com staff can only assist with sites that are hosted on our servers. Ahh okay I see. I just did that and it seems fine!
Am confused about the info under My Profile though?
That is, on mysite.com/wp-admin > Users > My Profile, I tried to change the email and it still says pending and is just waiting for me to get the confirmation email, but it never comes.
Does this email matter?

theresenguyen.com is a stand-alone WordPress site hosted with Dreamhost.com. The email address for that site has no connection at all with your WordPress.com username account, and we have no access to that site to help with this.
