Whar happens in between me changing the nameservers and paying for the domain to be mapped?
The blog I need help with is: (visible only to logged in users)

If its at wordpress.com your blog will stay live.
After its been changed your wp blog (blog.wordpress.com) will redirect to blogdomain.com

Seems wordpress.com has not caught up to your domain. It should within 1 hour or 1 day.
What is the wp.com blog url?

Let me back up. I am looking at this support page:
http://en.support.wordpress.com/domain-mapping/map-existing-domain/Step one is changing the nameservers to wordpress’s nameservers. Step two is to have it mapped. What happens if you complete step one and don’t do step two?

If you don’t do step 2. WordPress will have control of the domain name but won’t be able to use it.

Please be aware of something that I will share with you. This is the current active url http://grovechurch.wordpress.com/ Do you notice that the antiquainted “www” does not exist in it? No wordpress.com urls have “www” in them. Well, you have your username linked to http://www.grovechurch.com and it’s a bad url that cannot be loaded. Are you sure you didn’t purchase http://grovechurch.com ? -
www. will redirect to no www. so its the same domain.

I guess if you change your nameservers to wordpress’s nameservers, but don’t have it mapped, it will just come up as undeliverable as it is now.

I was trying to see if it would simply redirect the site, but now I see that redirecting is a different procedure.

Your host should be able to set up a redirect. It has nothing to do with the name servers.
