Change the title of a category

I am trying to change the title of a category from ‘Recipes’ to ‘Migraine Diet Recipes’ in an attempt to boost my search engine ranking. However, when I make this change via ‘edit’ or ‘quick edit’, the category disappears altogether from my header.
I also welcome advice regarding whether this category title change will actually make the difference I’m hoping it will. I’m new to blogging and am trying to figure out how to make my site easier to find.

1. To edit or delete a category assigned to a post (whether it’s a draft or has already been published), go to Dashboard → Posts → All Posts in your dashboard, hover over the title and click the Edit link. To delete the post click the Trash link.

2. To edit/delete categories in your dashboard go to Dashboard → Posts → Categories
