Changing auto-summary feature

Can I and how do I remove the auto-summary feature from the Grisaille theme?
I love everything else about the theme, but want to be able to choose where the “more” link in my posts appears. The automatic reduction of my posts to a 20-word summary on my main page doesn’t work for me, as I’d like to include pictures at the top of most of my posts.

The excerpt defaults to 20 words unless you set up a custom one.
