Changing default text color in block editor

When I am in the block editor, the default text color is a shade of gray. How can I change it to black?
After publication, the text color changes to black even if I do not change it in the block editor; however, given that, I would still like to know how to make the default black in the block editor.

That grey shade is the default font color for your theme. You can see it on the demo site here:

If I create a new post in this theme, that’s the color that appears in the editor, and on the published post. The only way the color in the published post can be black is if it’s explicitly set to that in the editor, and looking through your recent posts, it looks like that’s what you’ve done:
If you want, we can help you with custom CSS code to change the font color for your site globally, so you don’t have to set it per-block in the editor, but the editor itself will always show the dark-grey that’s the default for the theme. It’s not possible to change that.
