Is there a way to change a domain back to what I originally had? I mistakenly switched it and now cant seem to change it back. When I attempt to change it back to the previous one, it simply says that domain name is already in use.

Deleting a URL is intended to be a permanent act and that is why warnings are given that one has to ignore to delete a site.
Deleted wordpress.COM blog URLs are not recycled, regardless of who registered and deleted them and the only exceptions are made are for URLs that were deleted 2 or more years ago. http://en.support.wordpress.com/recycling-blog-names/
You can register another .wordpress.com blog http://en.support.wordpress.com/register-a-blog/

Then if you wish to you can register a domain via a domain mapping upgrade because it does not matter what the underlying .wordpress.com address is when you are domain mapping.
