Changing Header Text (Position/Colour/Font)

I’m wanting to change the position of the header text within the header itself but can’t seem to find out where i do that… I’ve gone through every single tab/page in the dashboard but can’t find it anywhere?
Also, because of the colour of my header, my preferred colour doesn’t show up very well… is there anyway to customize the theme (I’m using Standard) so that the text is above the header, not inside the header, as I’ve seen in some blogs?
Also, I just saw this in another blog but the font of the header text is different that the one I have chosen… any ideas?
