changing order of categories in side bar

  I seem to be going round in circles trying to change the order and subheadings of the posts listed in my Categories list in the side bar..I am using Spectrum…..I tried setting up a custom menu but got pretty bamboozled and made it worse…..can anyone help in simple language???
