Changing theme just puts the new theme on top of the old one

I haven’t been able to do anything at all on my new website because I am used to Colibri and I cannot figure the default theme out. When I try to change it to anything else it puts the old version into the body of the new theme. It’s like a theme within a theme. I just want to change the whole thing and get rid of all of that default crap. I would be fine with the default theme if I could actually find how to do anything! Even just trying to make the logo smaller is impossible. When I googled it everyone claims there is a slider for the size or an area to enter in the dimensions but I swear to God there is nothing like that on my screen. I have looked everywhere. This default theme is the most frustrating thing ever and I just want it gone ASAP. I’m only doing this for a class and I am sick of wasting hours just trying to figure out the frickin theme on a website that I’m never going to use again.

I believe it will make it easier for you to change the theme entirely.For the logo size- you can use additional css if you have premium plan. Else you’ll have to use smaller size logo by editing images from
Your site->media. Please check more details here.

It sounds like you might be conflating the theme with the layout of the page itself.
The theme is the overall design of the site – stuff like where the menu and widgets are located, what font and colors are used, etc. You can find instructions for the configuration options your current theme, Baskerville-2, offers here:

Baskerville-2 doesn’t give an option for different-sized logos. The logo size is fixed, and the only way to change it is by using custom CSS code, as explained above.
Changing the theme does not change the content or layout of any individual page – to change the layout of your front page, you need to edit it at My Site ->Pages, where you’ll be able to change and rearrange the content as you want.

When I was making this new account, it had me select a theme which looked exactly like the picture. I ended up not liking it, so I changed it to something else. The header and footer changed, but the page format from the theme I did not like was still there. I do not want to spend hours re-doing the page itself. I just want a template I can plug the things I need for class into. Is there no way to change the entire thing to look like the picture like it had done originally?
Also, I changed it to Baskerville-2 after I posted this because I saw that it had a smaller logo size so I think I’m okay on that part now. -

I’m thinking you may want to try Page Layouts instead. When creating a new page (your new homepage), you can choose one of the existing layouts and only replace the demo content with your own:
